Today's post will be a mish-mash of this and that. I actually made something, not crafty, but tasty. I will be getting crafty this week and next as I prepare a monkey theme party for my almost two year old. Anyhow, back to tasty treats. I cut out this recipe for Rocky Road Bars from a box of chocolate Betty Crocker cake mix forever ago. Since I'm pregnant, I wanted chocolate by golly and I was gonna get it. So I made these bars thinking only my boys and I would be eating them, my husband is always so picky about desserts. Man was I in for a shock when we polished off the entire 9"x13" pan in about 2 1/2 days! My husband couldn't get enough of these. We actually went to the store yesterday just so I could make another batch, he loves them that much. We changed the name to Ooey-Gooey Bars because they are rather gooey with the marshmallows on top. Especially when you don't wait the whole hour like the directions suggest before cutting and eating :o)
- 1 box Betty Crocker Super Moist milk chocolate cake mix
- 1/2 cup melted margarine
- 1/3 cup water
- 1/4 cup packed brown sugar
- 2 eggs
- 1 cup chopped nuts (we used walnuts)
- 3+ cups mini marshmallows (I cover the entire pan)
- 1/3 cup Betty Crocker Rich and Creamy chocolate frosting
- Heat oven to 350 degrees. Spray a 9x13 inch pan.
- In a large bowl, stir together half of the dry cake mix, the butter, water, brown sugar and eggs until smooth. Stir in remaining cake mix and nuts. Spread in pan and bake 20 minutes. Then remove it from the oven and sprinkle marshmallows all over the top.
- Bake 10-15 minutes longer or until marshmallows are puffed and golden. In microwavable bowl, microwave frosting uncovered on high for 15 seconds. Drizzle over bars. Cool completely, about 1 hour. For easier cutting, use plastic knife dipped in hot water.
I thought I would also share pictures of my new cookbooks that I picked up at the grocery store. I just love those mini cookbooks that they have above the candy rack. I found some recipes in the kids' book that sounded and looked really good, plus they had me sold with the pig looking ice cream. I can't wait to give them a try. There's also a recipe for a candy corn looking cake that I have to make for Halloween. It's soo cute! I also had to share a picture of the adorable bowl I picked up at Cracker Barrel. Isn't it great?!

I'm a total sucker for those little mini books too! I come up with some of the best stuff from there!! Glad to see you got moved in ok to Utah...when I'm done with school (end of January) I'll have time to create and post on my own blog :)
